Truffle Harvesting
Perigord has the most experienced team of truffle harvesters and dogs in Australia.
Our team of truffle handlers and highly trained truffle dogs are based in Tasmania and the cold areas of NSW and Victoria where we have established trufferies.
The dogs have been all trained under the guidance of Steve Austin considered by many to be Australia’s leading dog trainer.
Steve Austin has developed a training program for our dogs based on the successful program he has implemented with the Australian Quarantine Inspection Service (AQIS), Detector Dog Unit.
The handlers are trained and very experienced in determining the maturity of the truffles indicated by the truffle dogs.
During the truffle harvesting season the handlers and dogs are harvesting truffles daily in often adverse conditions.
