Truffle Harvesting

 

Perigord Truffles of Tasmania have appointed Mr. Steve Austin of Sydney to supply specially trained dogs for the truffle harvest. Mr. Austin is recognised as one of Australia's most qualified dog handlers. He presently holds the contract with the Australian Quarantine Service for the training of their beagles, which are used at Australia’s major airports.

Steve Austin will have fifteen fully trained truffle-harvesting dogs prepared for this year’s truffle harvest. During the peak of the truffle harvest period in July, Steve Austin spent two weeks in Tasmania working with the handlers and the dogs. Steve’s continued involvement ensures that the handlers and dogs are highly trained.

As the industry expands, Perigord Truffles of Tasmania anticipate having up to 60 dogs and 30 handlers operating in NSW, Victoria and Tasmania during the truffle harvest season. The dogs and handlers will be strategically positioned in the areas of Tasmania, Victoria and NSW where the truffières are located.
