Truffle and Black Garlic Butter by Naomi Sherman

TRUFFLE AND BLACK GARLIC BUTTER

The deep and earthy sweetness of black garlic pairs stunningly with this truffle infused butter

INGREDIENTS:

125 grams of good quality butter

20 grams grated truffle

6 cloves of black garlic

METHOD:

Bring the butter to room temperature until softened.

Place in the bowl of a stand mixer and add half of the black garlic.

Beat until light and fluffy.

Add the truffles and the rest of the black garlic and mix gently until combined.

Roll into logs using cling wrap or store in a glass jar.

Keep refrigerated until use.

Enjoy!

 

ROASTED CORN WITH TRUFFLE BUTTER

INGREDIENTS:

Truffle and Black Garlic Butter

4-6 Corn cobs

Olive oil

METHOD:

Peel back the husks of the corn and remove the silk.

Tie the husk at the base of the cob with string that has been soaked in water.

Generously oil the corn and place on a hot barbeque.

Cook for approx. 15 minutes, turning regularly until corn is cooked and blackened.

Place cooked corn cobs on a serving platter and dress with pats of truffle butter to serve.
